Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round baking dish or a similar-sized oven-safe bowl.
- In a large mixing bowl, combine the diced apples and chopped dates.
- In another bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.
- In a separate bowl, combine the melted butter, brown sugar, granulated sugar, eggs, vanilla extract, and milk. Whisk until smooth and well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Gently fold in the apple and date mixture until evenly distributed.
- Pour the batter into the prepared baking dish. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- While the pudding is baking, make the creamy toffee sauce. In a saucepan over medium heat, combine the brown sugar and butter. Stir until melted and smooth. Gradually add the heavy cream, stirring continuously until the mixture is well combined and slightly thickened. Remove from heat and stir in the vanilla extract.
- Once the pudding is baked, remove it from the oven and let it cool for a few minutes. Serve warm, drizzled with the creamy toffee sauce.
