Description

A delicious and creamy cheesecake made with cookie butter and bananas, perfect for any occasion.


Ingredients

  • 1 cup cookie butter
  • 2 cups cream cheese (softened)
  • 1 cup powdered sugar
  • 2 ripe bananas (mashed)
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup vanilla wafer cookies (crushed)
  • 1/2 cup bananas (sliced, for topping)

Instructions

  1. In a large mixing bowl, beat the cookie butter and cream cheese together until smooth and creamy.
  2. Add the powdered sugar, mashed bananas, and vanilla extract. Mix until fully combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cookie butter mixture until light and fluffy.
  5. Spread a layer of crushed vanilla wafers evenly over the bottom of the pan.
  6. Spread half of the cheesecake mixture over the wafer layer.
  7. Add another layer of crushed wafers, followed by the remaining cheesecake mixture.
  8. Cover and refrigerate for at least 4 hours, or overnight, until set.
  9. Top with sliced bananas just before serving. Slice and enjoy.

Notes

  • This cheesecake tastes even better after refrigerating overnight.
