Description
Delicious blueberry cream cheese quesadilla, perfect for a quick breakfast or snack.
Ingredients
Scale
- 2 medium flour tortillas
- 1/2 cup fresh blueberries
- 1/3 cup cream cheese, softened
- 1 tablespoon honey
- 1/4 teaspoon vanilla extract
- 1 tablespoon butter
Instructions
- Start by mixing the softened cream cheese with honey and vanilla extract in a small bowl.
- Lay one tortilla flat and spread the sweet cream cheese mixture evenly across its surface.
- Scatter the fresh blueberries on top, gently pressing them into the cream so they stay in place.
- Place the second tortilla over the top, creating a sandwich.
- Heat a skillet over medium heat and melt the butter, letting it coat the pan evenly.
- Carefully transfer the quesadilla into the skillet.
- Cook for about 2–3 minutes on each side, until the tortilla turns golden and crisp.
- Flip gently to avoid spilling the filling.
- Once done, remove from the skillet and let it cool for a minute before slicing into wedges.
Notes
- The inside will be warm, slightly gooey, and incredibly inviting.
- This creamy filling reminds me of weekend mornings when everything felt unhurried.
