Description

Delicious cookies made with brown butter and Irish rolled oats for a rich flavor and chewy texture.

Ingredients

Scale
  • 1 cup Brown Butter (Deep caramel flavor, ensure browned for best results.)
  • 2 cups Irish Rolled Oats (Use authentic brands like McCann’s.)
  • 1 cup Granulated Sugar (Sweetens and helps create chewy texture.)
  • 1 cup Brown Sugar (Enhances moisture and sweetness.)
  • 2 large Eggs (Room temperature for best blending.)
  • 2 teaspoons Vanilla Extract (Use pure vanilla for richer flavor.)
  • 1 teaspoon Baking Soda (Acts as a leavening agent.)
  • 1 teaspoon Flaky Sea Salt (To sprinkle on top.)
  • 2 tablespoons Optional Irish Cream (For added richness.)

Instructions

  1. In a medium saucepan over medium heat, melt the butter while stirring continuously until it reaches a deep amber color, about 5-7 minutes.
  2. In a large mixing bowl, combine the warm brown butter with both granulated and brown sugars, blend until light and fluffy, about 2-3 minutes.
  3. Whisk together Irish rolled oats, all-purpose flour, baking soda, and a pinch of salt in a separate bowl.
  4. Gradually incorporate the dry mixture into the wet ingredients, stirring gently until just combined.
  5. Cover the bowl with plastic wrap and refrigerate the cookie dough for about 30 minutes.
  6. Preheat your oven to 350°F (175°C) while the dough chills.
  7. Scoop tablespoon-sized portions onto a baking sheet, flatten slightly, and sprinkle with flaky sea salt if desired.
  8. Bake in the preheated oven for 10-12 minutes until edges are golden, and centers appear underbaked.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Using room temperature eggs helps in blending the ingredients effectively.
  • Do not overbake, as the cookies will continue to firm up while cooling.
  • Optional: Add chocolate chips for an extra treat!
