Description

This Carrot Cake Chex Mix is a delightful snack that combines the crunch of Corn Chex cereal with the sweet flavors of carrot cake.


Ingredients

  • 7 cups Corn Chex cereal
  • 1½ cups powdered sugar
  • ½ cup carrot cake mix
  • ½ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • 12 oz. white chocolate chips
  • 1 cup pecan halves (optional)

Instructions

  1. Place the Corn Chex cereal in an extra-large mixing bowl and set aside.
  2. In a small mixing bowl, stir together the powdered sugar, carrot cake mix, cinnamon, and nutmeg. Set aside.
  3. Add the white chocolate chips to a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until melted and smooth.
  4. Pour the melted white chocolate over the cereal. Gently fold with a rubber spatula until the cereal is evenly coated, being careful not to crush it.
  5. Sprinkle the sugar mixture over the coated cereal. Gently fold until well coated.
  6. Spread the mixture onto a baking sheet lined with parchment paper, or onto a large sheet of parchment paper. Let it cool for 20-30 minutes, or until set.
  7. Break up any large clusters and stir in the pecans, if using.
  8. Serve right away, refrigerate for a firmer texture, or store for later.
