Description

A refreshing salad with crisp celery, sweet apples, and crunchy walnuts, perfect for a light meal or side dish.


Ingredients

  • 3 cups celery, sliced (about 67 stalks)
  • 2 large crisp apples (like Fuji or Honeycrisp), cored and diced
  • 1/3 cup walnuts, roughly chopped
  • 1/3 cup dried cranberries
  • 1/4 cup red onion, finely diced
  • 1/2 lemon, juiced (about 1 tablespoon)
  • 1/3 cup mayonnaise
  • 1 tablespoon plain Greek yogurt (optional for creaminess)
  • 1 teaspoon honey or maple syrup
  • Salt and black pepper, to taste

Instructions

  1. Wash and slice the celery into thin, bite-size pieces.
  2. Core and dice the apples; leave the skins on for extra crunch and color.
  3. Finely dice the red onion.
  4. Place the diced apples in a large mixing bowl and immediately toss with the lemon juice to prevent browning and add a fresh zing.
  5. Add the sliced celery, walnuts, dried cranberries, and diced red onion to the apples in the bowl. Toss gently to combine.
  6. In a small bowl, whisk together the mayonnaise, Greek yogurt (if using), honey (or maple syrup), salt, and pepper until smooth.
  7. Pour the dressing over the salad ingredients. Toss to coat everything evenly. Taste and adjust seasoning if needed.
  8. For best flavor, cover the bowl and refrigerate the salad for at least 30 minutes before serving.
  9. Serve chilled, garnished with extra walnuts or cranberries if desired.

Notes

  • Try adding other nuts or seeds for additional crunch.
  • To make it vegan, omit the Greek yogurt and mayonnaise, and replace with a plant-based alternative.
