- 3 cups celery, sliced (about 6–7 stalks)
- 2 large crisp apples (like Fuji or Honeycrisp), cored and diced
- 1/3 cup walnuts, roughly chopped
- 1/3 cup dried cranberries
- 1/4 cup red onion, finely diced
- 1/2 lemon, juiced (about 1 tablespoon)
- 1/3 cup mayonnaise
- 1 tablespoon plain Greek yogurt (optional for creaminess)
- 1 teaspoon honey or maple syrup
- Salt and black pepper, to taste
Instructions
- Wash and slice the celery into thin, bite-size pieces.
- Core and dice the apples; leave the skins on for extra crunch and color.
- Finely dice the red onion.
- Place the diced apples in a large mixing bowl and immediately toss with the lemon juice to prevent browning and add a fresh zing.
- Add the sliced celery, walnuts, dried cranberries, and diced red onion to the apples in the bowl. Toss gently to combine.
- In a small bowl, whisk together the mayonnaise, Greek yogurt (if using), honey (or maple syrup), salt, and pepper until smooth.
- Pour the dressing over the salad ingredients. Toss to coat everything evenly. Taste and adjust seasoning if needed.
- For best flavor, cover the bowl and refrigerate the salad for at least 30 minutes before serving.
- Serve chilled, garnished with extra walnuts or cranberries if desired.
Notes
- Try adding other nuts or seeds for additional crunch.
- To make it vegan, omit the Greek yogurt and mayonnaise, and replace with a plant-based alternative.
