Description

A delicious and creamy chicken Alfredo lasagna with layers of pasta, ricotta cheese, chicken, and spinach.


Ingredients

  • 12 lasagna noodles
  • 3 cups cooked shredded chicken
  • 1 container (15 oz) ricotta cheese
  • 1 large egg
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 3 cups Alfredo sauce (homemade or high-quality jarred)
  • 2 cups fresh spinach or 1 cup thawed frozen spinach
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Boil the lasagna noodles until al dente, rinse in cold water, and lay flat.
  2. In a bowl, mix ricotta, egg, 1/2 cup Parmesan, Italian seasoning, salt, and pepper.
  3. Sauté spinach with minced garlic until wilted, or thaw and squeeze frozen spinach.
  4. Spread Alfredo sauce in a greased baking dish. Add noodles, ricotta mix, chicken, spinach, mozzarella, and sauce. Repeat layers.
  5. Finish with a final layer of noodles, Alfredo, mozzarella, and remaining Parmesan.
  6. Cover with foil and bake at 375°F for 25 minutes. Remove foil and bake another 15–20 minutes until golden.
  7. Let rest 10 minutes before slicing and serving.

Notes

  • For added flavor, consider using homemade Alfredo sauce.
  • Letting the lasagna sit before serving helps with slicing.
