- 4 large eggs
- 1 ¼ cups buttermilk
- 1 cup hot water
- 2 ½ cups unsalted butter
- 7 ½ cups powdered sugar
- 1 teaspoon peppermint extract
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ½ cup heavy cream
- Green and blue food coloring
- 4 oz semisweet chocolate, finely chopped
- 2 packages mint chocolate candies, chopped
Instructions
- Prepare the Cake Pans: Preheat oven to 350°F. Grease and line three 8-inch cake pans with parchment.
- Mix Dry Ingredients: Whisk flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients: Mix oil, eggs, vanilla, buttermilk, and hot water until smooth.
- Make the Batter: Combine wet and dry ingredients gently until just mixed.
- Bake the Cakes: Divide batter evenly and bake for 24–27 minutes. Cool completely.
- Prepare the Frosting: Beat butter until fluffy. Add powdered sugar, extracts, salt, and cream. Tint frosting and fold in chopped chocolate.
- Assemble the Cake: Layer cake with frosting and mint chocolates. Frost exterior and create a swirl finish.
