Description

Delicious chocolate cookies filled with raspberry jam, perfect for any occasion.


Ingredients

  • 1 cup (125g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup (160g) raspberry jam
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla extract until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop tablespoons of dough onto prepared baking sheets, spacing 2 inches apart. Flatten lightly with your fingers.
  6. Bake for 10-12 minutes until set. Cool completely, then spread raspberry jam on the flat side of half the cookies; top with remaining cookies to sandwich. Dust with powdered sugar if desired.
