A delicious chocolate ricotta pie with a flaky crust and a creamy filling.

- 15 oz ricotta cheese
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ½ cup mini chocolate chips
- 14 oz pre-made pie crusts
- 1 egg, beaten
- 1 tablespoon granulated sugar
- Chopped pistachios
- Maraschino cherries
- Extra chocolate chips
Instructions
- Prepare the Filling: Mix ricotta, powdered sugar, vanilla, and cinnamon until smooth. Fold in chocolate chips.
- Preheat the Oven: Heat oven to 375°F (190°C).
- Prepare the Bottom Crust: Press one pie crust into a 9×9-inch baking dish.
- Add the Filling: Spread ricotta mixture evenly over the crust.
- Add the Top Crust: Place second crust on top, seal edges, brush with egg, and sprinkle sugar.
- Bake: Bake for 30–35 minutes until golden.
- Cool and Slice: Cool at least 30 minutes before cutting into squares.
Notes
- This pie is best served chilled.
- Top with chopped pistachios and maraschino cherries for garnish.
