- 3–4 boneless, skinless chicken breasts
- 1 package (16 oz) fresh gnocchi
- 1 cup heavy cream (or half-and-half)
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup low-sodium chicken broth
- 1 tsp fresh thyme (or ½ tsp dried)
- 1 tsp fresh basil (or ½ tsp dried)

- 2 tbsp olive oil
Instructions
- Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat. Cook chicken for 6-7 minutes on each side until golden brown. Remove from skillet and stir to combine. Allow to simmer for about 5 minutes.
- Add gnocchi and Parmesan cheese to the skillet, stirring until heated through.
- Finish with fresh herbs before serving hot, topped with extra Parmesan if desired.
Notes
- You can substitute half-and-half for heavy cream for a lighter version.
- Add more vegetables like mushrooms or bell peppers for added flavor.
- Pair with a fresh salad for a complete meal.
