Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 package (16 oz) fresh gnocchi
  • 1 cup heavy cream (or half-and-half)
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 tsp fresh basil (or ½ tsp dried)

  • 2 tbsp olive oil

Instructions

  1. Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat. Cook chicken for 6-7 minutes on each side until golden brown. Remove from skillet and stir to combine. Allow to simmer for about 5 minutes.
  2. Add gnocchi and Parmesan cheese to the skillet, stirring until heated through.
  3. Finish with fresh herbs before serving hot, topped with extra Parmesan if desired.
