Description

Ingredients

  • 1 cup green or brown lentils
  • 2 medium sweet potatoes, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 medium yellow onion, chopped
  • 2 medium carrots, chopped
  • 2 cups spinach or kale
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté chopped onions and minced garlic until fragrant.
  2. Stir in diced sweet potatoes and carrots; cook for about 5 minutes until softened.
  3. Add rinsed lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25 minutes until lentils are tender.
  4. Mix in spinach or kale; stir until wilted (about 2-3 minutes).
  5. Season with salt, pepper, and optional spices like cumin or paprika to taste.
  6. Serve warm, optionally drizzling with more olive oil.
