A hearty and nutritious soup made with green or brown lentils and sweet potatoes.
Ingredients

- 1 cup green or brown lentils
- 2 medium sweet potatoes, diced
- 4 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 medium yellow onion, chopped
- 2 medium carrots, chopped
- 2 cups spinach or kale
- 2 tbsp olive oil
Instructions
- In a large pot over medium heat, add olive oil. Sauté chopped onions and minced garlic until fragrant.
- Stir in diced sweet potatoes and carrots; cook for about 5 minutes until softened.
- Add rinsed lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25 minutes until lentils are tender.
- Mix in spinach or kale; stir until wilted (about 2-3 minutes).
- Season with salt, pepper, and optional spices like cumin or paprika to taste.
- Serve warm, optionally drizzling with more olive oil.
