Instructions
- Prep your ingredients by peeling and dicing the sweet potatoes, bell pepper, and onion.
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add diced sweet potatoes to the skillet and sauté for about 10 minutes until slightly browned and tender.
- Stir in the diced onion, bell pepper, and minced garlic; cook for an additional 5 minutes until onions are translucent.
- Sprinkle in cumin, paprika, salt, and pepper; stir to combine well.
- Cook for another 5 minutes until everything is crispy and golden brown.
- Serve hot as-is or topped with a fried egg.
