Description

This creamy shrimp pasta with Boursin cheese is an easy and delicious meal perfect for weeknights.


Ingredients

  • 8 oz penne or rotini pasta
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 pound medium shrimp, peeled and deveined
  • 4 oz Boursin cheese (Garlic & Fine Herbs)
  • ¼ cup heavy cream (optional)
  • ¼ cup reserved pasta water
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook the Pasta• Bring a large pot of salted water to a boil.
    • Cook pasta until al dente.
    • Reserve ¼ cup pasta water, then drain.
  2. Sauté the Shrimp• Heat olive oil and butter in a wide skillet over medium heat.
    • Add shrimp in a single layer and cook 1–2 minutes per side until just opaque.
    • Transfer shrimp to a plate and set aside.
  3. Build the Garlic Base• Lower the heat slightly.
    • Add minced garlic to the same skillet and cook for about 30 seconds, just until fragrant.
  4. Make the Creamy Boursin Sauce• Add Boursin cheese and reserved pasta water to the skillet.
    • Stir gently until the cheese melts into a smooth sauce.
    • Add heavy cream if using and stir until combined.
  5. Toss with Pasta• Add cooked pasta directly to the skillet.
    • Toss gently until the pasta is evenly coated in the sauce.
  6. Finish and Serve• Return shrimp to the skillet and warm through for 1 minute.
    • Season with salt and pepper to taste.
    • Garnish with fresh parsley and serve warm.

Notes

  • This dish can be made with any type of pasta you have on hand.
  • Adjust the level of creaminess by using more or less heavy cream.
  • Fresh herbs can be added for more flavor.
