Description

A hearty and nutritious coconut vegetable soup made with cabbage, winter greens, and aromatic spices.


Ingredients

Scale
  • 1 medium head cabbage, chopped
  • 2 cups winter greens (kale or Swiss chard), chopped
  • 1 can (13 oz) full-fat coconut milk
  • 4 cups low-sodium vegetable broth
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent (about 5 minutes).
  2. Stir in minced garlic and grated ginger until fragrant.
  3. Add chopped cabbage and cook for another 5 minutes until it begins to soften.
  4. Stir in winter greens and cook until wilted.
  5. Pour in coconut milk and vegetable broth; bring to a gentle simmer.
  6. Cover and simmer for 20 minutes.
  7. Season with salt and pepper to taste before serving.
