- 1 medium head cabbage, chopped
- 2 cups winter greens (kale or Swiss chard), chopped
- 1 can (13 oz) full-fat coconut milk
- 4 cups low-sodium vegetable broth
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent (about 5 minutes).
- Stir in minced garlic and grated ginger until fragrant.
- Add chopped cabbage and cook for another 5 minutes until it begins to soften.
- Stir in winter greens and cook until wilted.
- Pour in coconut milk and vegetable broth; bring to a gentle simmer.
- Cover and simmer for 20 minutes.
- Season with salt and pepper to taste before serving.

- This soup can be served hot or warm and is great as a main dish or a side.
- You can add other vegetables based on your preference.
