Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar, divided
  • 1/4 cup brown sugar
  • 2 large egg yolks
  • 1 1/2 teaspoons vanilla extract
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, 3/4 cup granulated sugar, and brown sugar until light and fluffy. Beat in the egg yolks, vanilla extract, and heavy cream until well combined.
  4. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  5. Scoop tablespoonfuls of dough onto the prepared baking sheet. Bake for 10-12 minutes or until edges are golden.
  6. Sprinkle the remaining 1/4 cup granulated sugar on top of the baked cookies. Use a kitchen torch to caramelize the sugar until golden and crackly. Let cookies cool before serving.
