Ingredients

  • 2 oz unsweetened dark baking chocolate
  • ¼ cup creamy cashew butter or almond butter
  • ¼ cup pure maple syrup
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon pure vanilla extract
  • ⅓ cup cacao powder
  • 1 tablespoon coconut flour
  • ½ teaspoon baking soda
  • ⅛ teaspoon pink salt
  • ½ cup dark chocolate chips (optional)
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal later.
  2. Melt the unsweetened dark chocolate in a microwave-safe bowl in 30-second intervals, stirring between each until completely smooth.
  3. In a large bowl, mix the melted chocolate, mashed sweet potato, cashew butter, and maple syrup until completely incorporated. Add the egg, egg yolk, and vanilla extract, whisking until the mixture becomes silky smooth.
  4. In a separate bowl, combine the cacao powder, coconut flour, baking soda, and pink salt together.
  5. Fold the dry ingredients into the sweet potato mixture using a rubber spatula until just combined.
  6. Pour the batter into your prepared baking pan, spreading it evenly into the corners.
  7. Bake for 23-25 minutes until the edges are set but the center still appears slightly underdone.
  8. Let cool completely in the pan before lifting out and cutting into 12 squares.
