Ingredients

- 1 cup shelled edamame (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice (freshly squeezed)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the edamame in boiling salted water for 3-5 minutes if using frozen. Drain and cool.
- Chop cherry tomatoes and cucumber; slice red onion thinly and chop cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- In a large bowl, combine cooked edamame with chopped vegetables. Pour dressing over the mix and toss gently.
- Serve immediately or chill for 30 minutes to enhance flavors.
