Description

Ingredients

  • 1 cup shelled edamame (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the edamame in boiling salted water for 3-5 minutes if using frozen. Drain and cool.
  2. Chop cherry tomatoes and cucumber; slice red onion thinly and chop cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  4. In a large bowl, combine cooked edamame with chopped vegetables. Pour dressing over the mix and toss gently.
  5. Serve immediately or chill for 30 minutes to enhance flavors.
