- 2 cups cooked ham, diced
- 1 cup frozen mixed vegetables
- 1 cup heavy cream
- 1 refrigerated pie crust (store-bought or homemade)
- 1 cup chicken broth (low-sodium)
- 1 medium onion, chopped
- 1 tsp garlic powder
- 1 tsp dried thyme
Instructions
- Preheat your oven to 425°F (220°C).
- In a skillet over medium heat, sauté the chopped onion until translucent. Add the frozen mixed vegetables and cook until warmed through.
- Stir in the heavy cream and chicken broth, seasoning with garlic powder and thyme; let simmer gently.
- Fold in the diced ham until well-coated in the sauce.
- Pour the filling into a pie dish lined with one layer of crust. Cover with another crust and crimp edges to seal.
- Bake for 30–35 minutes or until the crust is golden brown and filling bubbles.
Notes
- Let the pie cool for a few minutes before cutting to allow the filling to set.
- This pie can be made ahead of time and reheated for a quick meal.
