Ingredients

- 2 ripe bananas
- 1 cup rolled oats
- 1 scoop protein powder (chocolate or vanilla)
- 2 eggs
- 1 cup milk (dairy or non-dairy)
- 1 tsp baking powder
- ¼ cup honey or maple syrup
- 1 tsp cinnamon
- Optional add-ins: nuts, chocolate chips, or berries
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the ripe bananas in a large mixing bowl until smooth.
- Add eggs and milk to the mashed bananas; whisk until combined.
- Gradually stir in oats, protein powder, and baking powder until just blended.
- Fold in honey (or maple syrup) and cinnamon.
- Pour batter into lined muffin tins and bake for 20-25 minutes or until golden brown.
Notes
- For added texture, mix in nuts, chocolate chips, or berries before baking.
- Store leftover muffins in an airtight container for up to 3 days.
