Easter Nest Cookies

Description

Delicious Easter-themed cookies made with chocolate and topped with colorful Peeps and jelly beans.


Ingredients

Scale
  • 2 cups sugar
  • ½ cup milk
  • ½ cup butter (salted or unsalted)
  • ¼ cup unsweetened cocoa powder
  • 2 tsp vanilla extract
  • 3 cups quick oatmeal (or a combo of quick oats and old fashioned oats)
  • 12 cups coconut (shredded, sweetened or unsweetened)
  • gel food coloring (one or two colors of your choice)
  • 1620 Peeps chicks
  • mini jelly beans (enough for 4-5 ‘eggs’ per nest)

Instructions

  1. Combine 2 cups sugar, ½ cup milk, ½ cup butter, and ¼ cup unsweetened cocoa powder in a saucepan. Bring to a full, rapid rolling boil over medium-high heat, stirring frequently.
  2. Once boiling vigorously, cook for exactly 1 minute without stirring. Remove from heat immediately.
  3. Stir in the 2 tsp vanilla extract until smooth, then pour in the 3 cups quick oatmeal and mix until thoroughly coated in the chocolate syrup.
  4. Drop heaping tablespoon-sized portions onto parchment paper. Use the back of a spoon to press a ‘well’ or nest shape into the center. Let set for 1 hour.
  5. Massage 1-2 cups coconut and gel food coloring in a zip-top bag until well coated. Spread on a baking sheet to dry.
  6. Fill each firm nest with coconut ‘grass.’ Top with one of the 16-20 Peeps chicks and 3–5 mini jelly beans as ‘eggs.’

Notes

  • Make sure to adjust the amount of coconut and food coloring based on your desired decoration style.
  • Let the nests cool completely before adding the toppings to avoid melting.
