Description

These roasted carrots are a delicious and elegant side dish, perfect for any meal.

Ingredients

Scale
  • 1 pound fresh medium-sized carrots, peeled and sliced into sticks or rounds
  • 3 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Start by preheating your oven to 425°F (220°C).
  2. Wash and peel the carrots, then slice them into evenly sized sticks or rounds to ensure consistent roasting.
  3. In a large bowl, combine the carrots with minced garlic, extra virgin olive oil, salt, and black pepper. Toss everything until the carrots are well-coated to help the garlic infuse its flavor during roasting.
  4. Spread the carrots in a single layer on a baking sheet lined with parchment paper to allow even heat circulation.
  5. Roast in the oven for 20 to 25 minutes, tossing halfway through, until the carrots are tender and golden brown.
  6. Remove the carrots from the oven and immediately sprinkle the grated Parmesan cheese over the hot carrots so it slightly melts. Gently toss to evenly combine the cheese without breaking the carrots.
  7. Finish with a sprinkle of chopped fresh parsley if desired, and serve warm as a delicious and elegant side dish.

Notes

  • Ensure the carrots are cut evenly for uniform cooking.
  • For extra flavor, add other spices such as thyme or rosemary.
