Ingredients

  • 1 cup Buffalo sauce
  • ½ cup ranch dressing
  • 6 cups mixed greens (romaine, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced thinly
  • 2 celery sticks, chopped
  • 1 cup shredded cheese (blue cheese or cheddar)
  • ¼ cup green onions, sliced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place seasoned chicken breasts in a baking dish coated with nonstick spray and bake for 25-30 minutes until cooked through.
  3. Let the chicken rest for a few minutes before shredding with two forks.
  4. Toss the shredded chicken with Buffalo sauce until well-coated.
  5. In a large bowl, combine mixed greens, cucumbers, cherry tomatoes, and celery sticks.
  6. Layer the buffalo chicken mixture on top of the salad base and drizzle ranch dressing over everything.
