- 4 pieces boneless, skinless chicken breasts
- 8 oz fresh mushrooms (button or cremini)
- 1 cup heavy cream
- 3 cloves garlic (minced)
- 1 cup low-sodium chicken broth
- 2 tbsp olive oil
- 2 tbsp fresh parsley (chopped)
- Salt and pepper to taste
Instructions
- Pat the chicken breasts dry with paper towels for better searing.
- In a large skillet, heat olive oil over medium heat. Sauté sliced mushrooms until golden brown (about 5-7 minutes).
- Add minced garlic and cook for another 30 seconds. Pour in chicken broth, scraping up any bits stuck to the pan.
- Stir in heavy cream and allow it to simmer gently until thickened.
- Return the seared chicken breasts to the skillet and let them cook in the sauce for 10-15 minutes until fully cooked.
- Sprinkle freshly chopped parsley on top before serving.
