Ingredients

  • 8 oz fresh mushrooms (button or cremini)
  • 1 cup heavy cream
  • 3 garlic cloves (minced)
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. Pat the chicken breasts dry with paper towels for better searing.
  2. In a large skillet, heat olive oil over medium heat. Sauté sliced mushrooms until golden brown (about 5-7 minutes).
  3. Add minced garlic and cook for another 30 seconds.
  4. Pour in chicken broth, scraping up any bits stuck to the pan.
  5. Stir in heavy cream and allow it to simmer gently until thickened.
  6. Return the seared chicken breasts to the skillet and let them cook in the sauce for 10-15 minutes until fully cooked.
  7. Sprinkle freshly chopped parsley on top before serving.
