Ingredients

  • ¼ cup milk or cream
  • 1 cup powdered sugar (for icing)
  • 2 tbsp milk or cream (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream the butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time along with lemon zest, mixing gently.
  5. Stir in the dry ingredients alternately with lemon juice and milk until smooth.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  7. Cool in the pan for a few minutes before transferring to a wire rack.
  8. For icing, mix powdered sugar with milk until smooth, then drizzle over cooled cake.
