- 1 cup granulated sugar
- 1 ½ tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter (softened)
- 3 large eggs (room temperature)
- Zest of 1 lemon
- ¼ cup freshly squeezed lemon juice
- ¼ cup milk or cream
- 1 cup powdered sugar (for icing)
- 2 tbsp milk or cream (for icing)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, cream the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time along with lemon zest, mixing gently.
- Stir in the dry ingredients alternately with lemon juice and milk until smooth.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack.
- For icing, mix powdered sugar with milk until smooth, then drizzle over cooled cake.
