Delicious and flaky scallion pancakes made from scratch.
Ingredients
Scale
- 2 cups all-purpose flour
- 3/4 cup boiling water
- 1 cup chopped scallions (green onions)
- 1/2 tsp salt (plus additional for seasoning)
- 1/4 cup vegetable oil (for frying)
Instructions
- In a large bowl, mix flour and salt. Gradually pour in boiling water, stirring until it forms a shaggy dough.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Let it rest for 30 minutes.
- Finely chop scallions and sprinkle with a pinch of salt.
- Divide the dough into equal portions; roll each into thin circles about 1/8 inch thick.
- Spread chopped scallions over each circle, roll tightly into a log, then coil like a cinnamon bun.
- Heat vegetable oil in a skillet over medium heat; fry each pancake for 3-4 minutes on each side until golden brown.
Notes
- For extra flavor, you can add minced garlic to the scallions.
- Serve with soy sauce or your favorite dipping sauce.
