Description

Deliciously rich brownies made with Medjool dates and almond butter, perfect for a sweet treat!


Ingredients

  • 8 ounces Medjool dates
  • 1/2 cup roasted almond butter
  • 5 tablespoons Dutch process cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Line an 8×8-inch baking dish with parchment paper, allowing some overhang for easy removal later.
  2. Remove pits from the Medjool dates if they haven’t been pitted already. Place the dates in a food processor along with the roasted almond butter, cocoa powder, and salt.
  3. Process the mixture for 1-2 minutes or until everything is thoroughly combined.
  4. Scrape down the sides of the food processor bowl and continue blending until you achieve a sticky, uniform mixture.
  5. Add the mini chocolate chips (if using) and pulse briefly just to incorporate them into the mixture.
  6. Transfer the brownie mixture to your lined baking dish. Press firmly and evenly using the back of a spoon.
  7. For the optional topping, melt the chocolate chips and coconut oil, then pour over the date mixture.
  8. Refrigerate for at least 1 hour until firm. Cut into 12 squares.

Notes

  • For a richer taste, you can increase the amount of chocolate chips.
  • Make sure to allow enough time for the brownies to chill for best texture.
