Description

Delicious pumpkin spice cookies perfect for the fall season.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 cup canned pumpkin puree (not pie filling)
  • 1/3 cup brown sugar, packed
  • 1 tsp pumpkin pie spice
  • 1/4 tsp cinnamon
  • 1/4 cup full-fat cream cheese, softened
  • 2 tbsp heavy cream
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and sugars until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, salt, pumpkin pie spice, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the pumpkin puree, cream cheese, heavy cream, and additional vanilla extract.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

  • For a richer flavor, allow the cookies to sit for a day before serving.
