Roasted Radishes with Chives

Description

Deliciously roasted radishes seasoned to perfection with olive oil, salt, and spices, topped with fresh chives.


Ingredients

Scale
  • 2 bunches radishes (about 20 radishes, halved)
  • 1 1/2 tablespoons extra virgin olive oil
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon Aleppo pepper
  • 1/2 tablespoon butter (optional)
  • 1 to 2 tablespoons lemon juice (from about 1/2 lemon)
  • 3 tablespoons minced fresh chives

Instructions

  1. Preheat the oven to 400°F.
  2. Trim the greens from the radishes, leaving a little tail and tuft of green for interest. If the greens are good, rinse and dry them; otherwise, discard.
  3. In a medium oven-safe skillet, add the halved radishes, olive oil, salt, and Aleppo pepper. Toss together and place the radishes cut side down.
  4. Roast in the oven for 20 to 25 minutes, until firm but tender.
  5. Remove from oven, add butter (if using), and toss until melted. If using greens, add and toss to wilt; return to oven for 3 to 5 minutes if needed. Drizzle with lemon juice and sprinkle with chives before serving. Adjust seasoning to taste.

Notes

  • Adjust lemon juice, salt, or Aleppo pepper to your preference.
  • Serving with fresh herbs can enhance flavor.
