Description

Delicious chicken fajitas made with fresh ingredients and spices, perfect for a quick meal.


Ingredients

  • 2 lbs boneless skinless chicken breasts, sliced into 1/2-inch thick strips
  • 2 tablespoons fajita seasoning (https://www/homemade-fajita-seasoning/)
  • 2 tsp minced garlic
  • 1 teaspoon salt
  • 3 Tbsp olive oil
  • 1 red bell pepper, cored and sliced into strips
  • 1 green bell pepper, cored and sliced into strips
  • 1 yellow bell pepper, cored and sliced into strips
  • 1 medium yellow onion, halved and sliced from top to root
  • 2 fresh limes
  • 3 Tbsp chopped cilantro

Instructions

  1. Preheat the oven to 400°F (200°C). Spray a 17 by 12-inch rimmed baking sheet with non-stick cooking spray or cover it with foil.
  2. Place the chicken in a large bowl. Add the fajita seasoning and minced garlic and toss to coat. Spread the seasoned chicken onto the prepared baking sheet.
  3. Add the sliced bell peppers and onion onto the baking sheet.
  4. Drizzle olive oil over the chicken and vegetables. Sprinkle with salt and toss everything to evenly coat. Spread into an even layer, working to keep the chicken from overlapping.
  5. Roast in the preheated oven, tossing once halfway through cooking, until the vegetables are tender and the chicken is cooked through, about 18–25 minutes.
  6. Wrap tortillas tightly in foil and warm them in the oven during the last 5 minutes of cooking.
  7. Drizzle the juice from fresh limes evenly over the cooked chicken and vegetables. Sprinkle with chopped cilantro and additional salt to taste, then toss to coat.
  8. Serve warm in the tortillas with your desired toppings, and additional lime wedges and fresh cilantro if desired.

Notes

  • For best results, use freshly squeezed lime juice.
  • Tortillas can be corn or flour based on preference.
