Delicious chicken fajitas made with fresh ingredients and spices, perfect for a quick meal.

- 2 lbs boneless skinless chicken breasts, sliced into 1/2-inch thick strips
- 2 tablespoons fajita seasoning (https://www/homemade-fajita-seasoning/)
- 2 tsp minced garlic
- 1 teaspoon salt
- 3 Tbsp olive oil
- 1 red bell pepper, cored and sliced into strips
- 1 green bell pepper, cored and sliced into strips
- 1 yellow bell pepper, cored and sliced into strips
- 1 medium yellow onion, halved and sliced from top to root
- 2 fresh limes
- 3 Tbsp chopped cilantro
Instructions
- Preheat the oven to 400°F (200°C). Spray a 17 by 12-inch rimmed baking sheet with non-stick cooking spray or cover it with foil.
- Place the chicken in a large bowl. Add the fajita seasoning and minced garlic and toss to coat. Spread the seasoned chicken onto the prepared baking sheet.
- Add the sliced bell peppers and onion onto the baking sheet.
- Drizzle olive oil over the chicken and vegetables. Sprinkle with salt and toss everything to evenly coat. Spread into an even layer, working to keep the chicken from overlapping.
- Roast in the preheated oven, tossing once halfway through cooking, until the vegetables are tender and the chicken is cooked through, about 18–25 minutes.
- Wrap tortillas tightly in foil and warm them in the oven during the last 5 minutes of cooking.
- Drizzle the juice from fresh limes evenly over the cooked chicken and vegetables. Sprinkle with chopped cilantro and additional salt to taste, then toss to coat.
- Serve warm in the tortillas with your desired toppings, and additional lime wedges and fresh cilantro if desired.
Notes
- For best results, use freshly squeezed lime juice.
- Tortillas can be corn or flour based on preference.
