Description

Delicious beef and bean burritos topped with green chile sauce and melted cheese.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) refried beans
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup Monterey Jack cheese, shredded
  • 2 cups green chile sauce
  • 1 small onion, diced
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3 minutes.
  3. Add ground beef to the skillet. Cook until browned, breaking it up as it cooks. Drain excess fat. Stir in cumin, garlic powder, salt, and pepper.
  4. Stir in refried beans and half of the cheddar and Monterey Jack cheese until cheese is melted and mixture is combined.
  5. Spoon beef and bean mixture evenly into tortillas. Roll up each burrito and place seam-side down in the prepared baking dish.
  6. Pour green chile sauce over the burritos and sprinkle with remaining cheeses. Bake for 20 minutes, or until cheese is bubbly and burritos are heated through. Serve hot.

  • Feel free to add more toppings like sour cream or guacamole.
  • You can make these burritos ahead of time and freeze them.
