Description

A delicious stuffed eggplant recipe featuring ground beef and cheese.


Ingredients

Scale
  • 2 large eggplants
  • 1 lb ground beef
  • 2 tomatoes, diced
  • 1 green pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cheese (cheddar or mozzarella), shredded
  • Olive oil, salt and pepper to taste
  • Italian seasoning (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants in half lengthwise and scoop out the flesh.
  3. Set the scooped-out flesh aside.
  4. Heat olive oil in a large skillet over medium heat.
  5. Sauté the onion, garlic, and green pepper until soft, about 5 minutes.
  6. Add the ground beef and cook until browned.
  7. Add in the diced tomatoes and chopped eggplant flesh, season, and let simmer for 5-7 minutes.
  8. Stuff the eggplant halves with the beef mixture.
  9. Top each half with shredded cheese.
  10. Bake for 25-30 minutes until tender and cheese is bubbly.
  11. Serve hot and enjoy!
