Ingredients

- 2 large eggplants
- 1 lb ground beef
- 2 tomatoes, diced
- 1 green pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup cheese (cheddar or mozzarella), shredded
- Olive oil, salt and pepper to taste
- Italian seasoning (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the eggplants in half lengthwise and scoop out the flesh.
- Set the scooped-out flesh aside.
- Heat olive oil in a large skillet over medium heat.
- Sauté the onion, garlic, and green pepper until soft, about 5 minutes.
- Add the ground beef and cook until browned.
- Add in the diced tomatoes and chopped eggplant flesh, season, and let simmer for 5-7 minutes.
- Stuff the eggplant halves with the beef mixture.
- Top each half with shredded cheese.
- Bake for 25-30 minutes until tender and cheese is bubbly.
- Serve hot and enjoy!
