Description
A delicious and easy Chicken Enchilada Casserole that layers tortillas, shredded chicken, creamy sauce, and cheese for a satisfying meal.

- 2 cups cooked shredded chicken
- 8 medium flour tortillas
- 1 cup sour cream
- 1 can (10 oz) cream of chicken soup
- 1 can (4 oz) diced green chiles
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 2 cups shredded cheddar cheese
- 2 cups shredded Monterey Jack cheese
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat oven to 350°F and lightly grease a 9×13-inch baking dish.
- In a bowl, stir together sour cream, cream of chicken soup, green chiles, garlic powder, and onion powder until smooth.
- Spread a thin layer of sauce in the bottom of the dish.
- Layer tortillas (cut to fit), then add chicken, more sauce, and a layer of both cheeses.
- Repeat layers until all ingredients are used, ending with sauce and cheese on top.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake an additional 10–15 minutes until cheese is golden and bubbly.
- Let rest for 10 minutes, then garnish with cilantro and serve.
Notes
- For a spicier kick, add jalapeños.
- Great for meal prep and can be made ahead of time.
