Description

A delicious and easy Chicken Enchilada Casserole that layers tortillas, shredded chicken, creamy sauce, and cheese for a satisfying meal.


Ingredients

  • 2 cups cooked shredded chicken
  • 8 medium flour tortillas
  • 1 cup sour cream
  • 1 can (10 oz) cream of chicken soup
  • 1 can (4 oz) diced green chiles
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Preheat oven to 350°F and lightly grease a 9×13-inch baking dish.
  2. In a bowl, stir together sour cream, cream of chicken soup, green chiles, garlic powder, and onion powder until smooth.
  3. Spread a thin layer of sauce in the bottom of the dish.
  4. Layer tortillas (cut to fit), then add chicken, more sauce, and a layer of both cheeses.
  5. Repeat layers until all ingredients are used, ending with sauce and cheese on top.
  6. Cover with foil and bake for 25 minutes.
  7. Remove foil and bake an additional 10–15 minutes until cheese is golden and bubbly.
  8. Let rest for 10 minutes, then garnish with cilantro and serve.

Notes

  • For a spicier kick, add jalapeños.
  • Great for meal prep and can be made ahead of time.
