Description
A delicious cheesy dip made with ground beef, Velveeta cheese, and spices, perfect for serving with tortilla chips or crostini.
Ingredients

- 1 lb ground beef (lean, medium, or extra lean)
- 1 tbsp taco seasoning (or 1/2 tsp each chili powder, garlic powder, onion powder, paprika, cumin)
- 1 can (10 ounces) Rotel (or 1 can diced tomatoes with chilies)
- 1 brick (2 cups, 16 ounces) Velveeta cheese, cubed
- Diced tomatoes
- Freshly parsley or cilantro, chopped
- Green onions, chopped
Instructions
- Heat a large skillet or frying pan to medium heat. Add the ground beef and break it apart with a wooden spoon. Cook until no pink remains, approximately 5 minutes. Drain any excess fat.
- Reduce the heat to medium and add in the taco seasoning and Rotel with juices. Cook for 2-3 minutes or until fully combined and the sauce is simmering. Reserve 1 tbsp of the diced tomatoes to garnish the dip before serving.
- Add in the cubed Velveeta cheese. Stir continuously until the cheese is fully melted.
- Optional: garnish the dip with the reserved diced tomatoes, chopped parsley or cilantro, and/or sliced green onions. Serve immediately with tortilla chips, crostini, or toasted baguettes to dip and enjoy!
Notes
- This dip can be made ahead of time and reheated before serving.
- Feel free to adjust the spices according to your taste.
